In the 1930s, Popeye, the lovable roughneck cartoon character, was best known for consuming spinach, which gave him superhuman strength and talents. Spinach growers credited the sailor man with increasing American spinach consumption by more than one-third. This good-for-you green remains popular today, here adding flavor to these sliders.

Patties

1½ pounds ground chicken thigh meat

1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry

1 cup shredded mozzarella cheese (about 4 ounces)

¼ cup fine dried bread crumbs

¼ cup finely chopped yellow onion

2 tablespoons balsamic vinegar

1 teaspoon kosher salt

2 garlic cloves, minced

½ teaspoon freshly ground black pepper

2 medium red bell peppers

Extra-virgin olive oil

12 slices mozzarella cheese, trimmed roughly to size of sliders

12 slider buns, split
